How to make a food expiry test and calculate expiry date?

      Have you ever wondered?  how do manufacturer know their product expiry date?  How to test and calculate expiry date? 
      If you made a homemade product such as food, drink, bakery or some kind of snack that shelf life is short. you can setup an easy test to know your product shelf life.
      After you making your product  keep some of them to test (may be 10-30 pcs.).  Put your product with packaging in same condition when it on shelf such as in fridge or in room temperature. make a table to record as sample here.

      You must think about what criteria to decide your product is expired. colour, odour, taste, crispness or for drinking product is clearness, stain etc.  

      For Example, Your product is crispy potato, assumed that shelf life is 3 month. The date you making product (Manufacturing Date) keep 10-30 pcs. for testing. First, test 1 pack every week and record apperance in table, then gradually increase frequency to test every 5 days / 4 days /3 days / 2 days and everyday. Until  the day that appearance or taste unexceptable that is your product expiry date. In this case we supposed product expire in 75 days, you can also says your product shelf life is 75 days.  

      You know your product shelf life now, but normally when define expiry date we'll declare the date less than that. Because when your product on shelf, there are many factor can affect product quality. For our sample case in testing condition product expire in 75 days, we'll declare shelf life is 60 days.


      Then, you can calculate your expiry date.  For another example, MFG date is 30 SEP 2018 product shelf life 18 months, so  what is the expiry date you print on your packaging? you can count manually like this.
